TRADITIONAL METHODS

NATURAL-DRY PROCESS

In this method, ripe coffee cherries are dried in the sun with their skin and pulp intact. As the cherries dry, they naturally ferment, imparting a sweet, fruity flavour to the coffee.

WASHED-WET PROCESS

In this method, the outer skin and pulp are removed from the coffee cherries, and the beans are washed to remove any remaining residue. This results in a coffee with a cleaner, brighter flavour profile.

HONEY PULPED PROCESS

This method is similar to the washed process, but some of the mucilage is left on the beans, giving the coffee a sweeter, more complex flavour.

EXPERIMENTAL METHODS

ANAEROBIC PROCESS

In this method, the coffee cherries are placed in a sealed tank without oxygen, allowing the beans to ferment in a unique, controlled environment. This process can result in a coffee with a distinct, fruity flavour.

CARBONIC MACERATION

In this method, the coffee cherries are placed in a sealed tank filled with carbon dioxide, allowing the beans to ferment under pressure. This can produce a coffee with a fruity, wine-like flavour.

YEAST INOCULATION

In this method, specific strains of yeast are added to the coffee during fermentation, resulting in a coffee with a more complex, fruit-forward flavour.

FRUIT FERMENTATION

In this method, coffee cherries are fermented along with other fruits like pineapple, mango, or passionfruit, creating a unique, fruity flavour profile.

KOJI FERMENTATION

In this method, a type of mold called koji is used to ferment the coffee beans, resulting in a coffee with a sweet, nutty flavour.

FROZEN CHERRY FERMENTATION

In this method, the coffee cherries are frozen before being fermented, resulting in a coffee with a sweet, fruity flavour.

MOSTO PROCESS

In this method, the coffee cherries are fermented using a type of wine-making process, resulting in a coffee with a complex, wine-like flavour.
